Pineapple Cheese Casserole

1 cup sugar
8 tbsp flour
2 cups sharp Cheddar cheese
2 cups drained crushed pineapple
1 roll Ritz® crackers, crushed
1 stick butter, melted

Preheat oven to 350° F. Mix sugar, flour, Cheddar cheese and crushed pineapple in a casserole dish. Top with crushed Ritz crackers. Pour melted butter over top and bake for 30 minutes.

Pineapple Souffle

1 stick butter
4 slices white bread
3 eggs, well beaten
2 tbsp flour
1 small can crushed pineapple (juice and all, 1 cup)
1/2 cup sugar
Pinch of salt

Preheat over to 400° F. Melt butter in a non-stick skillet. Cube or crumble the white bread and then brown lightly in the butter. Beat eggs and add sugar; beat well. Then add flour and salt and mix well. Add crushed pineapple last. Grease casserole dish and add pineapple mixture. Top with the browned bread crumbs. Bake for 25-30 minutes. Watch and remove from oven before it gets too browned. This recipe is an excellent side dish with ham.

Escalloped Pineapple Recipe

1 1/3 sticks butter
1/2 cup sugar
2 eggs
1 (20 ounce) can unsweetened pineapple chunks
1/2 cup milk
6 slices “day old” bread, cubed

Cream butter and sugar. Add eggs; beat well. Add pineapple, including pineapple juice, milk and bread cubes. Mix and place in a greased 1 1/2 quart casserole. Cover and refrigerate overnight. Bake, uncovered, for 1 to 1 1/2 hours in a 350° F oven until firm.

Baked Pineapple Recipe

1/2 cup butter
3/4 cup sugar
dash of salt
3 eggs, beaten
1 (Number 2) can, crushed pineapple
5 slices of white bread, cubed

Cream together the butter, sugar and salt. Beat in the eggs. Add the crushed pineapple and bread cubes. Mix all of this together and pour into a casserole dish. Bake for 40 to 50 minutes at 325° F. Excellent served with ham.

Baked Pineapple Crush Recipe

1 can (16 ounces) crushed pineapple, undrained
three to four tablespoons flour
one half cup sugar
three eggs
one or two slices of bread, cubed

Beat eggs. Add the remaining ingredients. Place in casserole and top mixture with bread cubes and dot top with butter. Bake at 375° F. for 30 minutes or until done.

Pineapple Bread Casserole Recipe

1 can crushed pineapple, drained
1 stick of butter or margarine
1 cup sugar
5 slices of bread (cubed)
4 eggs

Cream sugar and butter, add eggs one at a time. At pineapple (drained) and cubed bread. Turn into buttered casserole. Bake at 350° for 3/4 hour. Serve as a side dish with a meal.

Pineapple Surprise Recipe

5 ounce canned water chestnuts
3/4 cup drained pineapple chunks
12 lean bacon slices, halved
lemon juice
1/4 cup soy sauce

Quarter each water chestnut. Place each water chestnut piece on a chunk of pineapple; roll in half a bacon slice. Dip in lemon juice. Fasten with a toothpick. Place on a baking sheet. Sprinkle with soy sauce. Broil 3″ from heat until brown and crisp. Recipe makes 6 servings of Pineapple Surprise.

Bean and Pineapple Platter Recipe

4 bacon slices
2 tbsp brown sugar
dash ground cloves
4 pineapple slices, halved
1 pound pork & beans with tomato sauce

Fry bacon until crisp; drain and crumble. Pour off all but 1 teaspoon drippings. Add sugar and cloves; melt, stirring. In mixture, brown pineapple on each side. Arrange in ring on heated platter. Heat beans and bacon. Serve in center of pineapple. 4 servings.
